Cauliflower Mash potato

Ingredients:
Heavy Cream, Cauliflower ( 1 head), 1 lemon, Mozzarella Cheese (shredded), Parmesan Cheese (shredded), Black pepper, sea salt (pink), Mrs. Dash (lemon & garlic seasoning), Minced Garlic, Scallions, Onion powder, Cream Cheese, butter.
How to prepare:
Slice the outer part of the head of cauliflower. Place the entire head in a pot of boiling water with a pinch of salt. Cover and boil for anywhere between 15-20 minutes or until cauliflower is soft. Immediately drain Cauliflower. Grab a potato masher!! Mash down repeatedly until you have reached your desired consistency.
Once mashed slice a stick of butter into 4 parts. Use 1 part by adding it directly into the mashed cauliflower. Next add in 1 cup of heavy cream, 1 cup of cream cheese, sprinkle in all of your seasonings. Place mixture back on stove on low for about 3 minutes. Stir mixture repeatedly. Add in 1 extra cup of heavy cream, add in cheese mozzarella & Parmesan ( 1 cup each) Mix well… add in 1 teaspoon of minced garlic. Let cauliflower mash rest in a covered dish or pot for 5 minutes. Slice scallions and lemons. Squeeze half a lemon over top of your mash. Mix, add in scallions on top for flair along with cilantro chopped ( just a few)!
add a piece of sliced butter to the top of your mash once placed in a serving dish.
“Wahlah Magic”-Cauliflower Mash
Pair your mash with a pan seared fish and a side of Broccoli.. you can add Turkey bacon or bacon bits to the top of your mash for a heartier dish.
