Cheeseburger Soup..
Cheese burger soup is a family favorite.
Filled with all the makings of a perfect burger made into a hot “fulfilling” soup!
Ingredients:
2lbs ground beef ( can be subbed for Turkey)
2lbs ground Lamb( can be subbed for Chicken)
1 onion ( white)
1 bunch of scallions
1/2 cup of flour
1/2 cup of veggie stock
1/2 Jar of ( Bread & butter pickles)
1 stick or butter
Garlic powder
Onion powder
Sea salt / Pepper
Seasoning salt ( a pinch or two)
Mozzarella cheese
Smoked Gouda cheese
Provolone cheese
Parmesan Cheese
Olive Oil
Heavy Cream
How to prepare:
Start out by adding 1/2 cup of olive oil to a frying pan. Add in your ground Turkey & Ground lamb cooking on medium heat until browned. Once browned drain any excess oil out of the pan. move all the meat to one side of the pan. Add on your sliced onions ( peppers too if you like.) then cook on low until the onions have become soft.
Slowly, mix the meat plus the veggies together. Add in your seasonings mixture. Turn your stove on low heat. Slowly pour in your heavy cream add in a stick of butter let that simmer for about 5-7 minutes covered to reduce splashing.
Next, start to add in your grated cheeses. After adding the cheeses add in your veggie ( stock) about 1 cup. Add in your flour, mixing & stiring constantly for about 5 minutes. Reduce heat again to low & cover for about 5-7 minutes.
Add in your sliced pickles ( bread & butter)
Add more cream or stock for a thinner consistency. Let that simmer for 5-7 minutes.
Grab a bowl & serve!
Add ons: one loaf of fresh Italian bread. Slice down into circles makes the perfect addition to eat with your soup. Don’t forget to add butter to your bread with Italian seasoning on top!
Perfect soup for cold days.
