Low calorie Orange Chicken

Here is our Low Calorie recipe for OC!
Ingredients:
-Chicken Cutlets , Veggies ( peppers onions), onion powder, garlic powder, minced garlic, cilantro, parsley, salt, pepper, Mrs. dash, almond flour, brown rice, celery seeds, any other seasoning of choice.
*Add ins: You can add spices and seasonings as you see fit. A good pairing with this would be fennel seeds, and or Chia seeds you can use Quinoa instead of rice. I paired this meal with a Sweet Red blend wine! Great pairing sweet & salty.
-Instructions:
start with cleaned chicken cutlets (3). Slice cutlets down into small pieces. Place in a bowl and add seasonings. next prepare rice ( of choice) for this receipe I used Brown Rice. It’s a healthier alternative to white rice for low carbers and low calorie folks. Cook your rice set to the side once completed.
Next take your seasoned cutlets ( sliced) and roll them in your Almond Flour piece by piece. Place them in a nonstick pan filled with Olive Oil or Avocado Oil. Grape seed oil will do too! Pan fry all your pieces of chicken. Next prepare your sauce!
-Sauce: Smuckers Orange Marmalade ( SF)
I used sugar free version. I also added in some G. Hughes Sugar Free Hickory BBQ sauce. Place in a bowl add in minced Garlic. Cilantro, Onion Powder, a tea spoon of Olive Oil, Garlic Powder, and a dash of salt and pepper. Mix it all up pour the mixture over your prepared cutlets set to the side….
after you have done that add to a baking pan. Place in the oven on 350 for about 6-7 minutes. Before placing them in the oven add in your sliced veggies. I used Ted peppers, green peppers and sliced white onions. I like my veggies to still have a crunch so adding them in when the poultry is in the oven is best for a crunch.
Once your timer stops at 7 minutes…
plate your cooked rice, and add the cooked chicken over the rice. I lastly topped mine with some celery seeds and we ENJOYED!
